With just a few ingredients it is possible to make a delicious savory pie with courgette flowers, perfect to enjoy at any time.

Have you ever thought about using courgette flowers to make a spring savory pie? We made it in this recipe using a few other ingredients so as to create an excellent rustic dish that can be enjoyed in any way: hot, at room temperature or cold. In short, savory pie with courgette flowers is always good!

As for the filling, you can choose any ingredients you prefer. We opted to use ricotta , cheese and grated lemon zest which gives the recipe an incredible boost of flavour. The courgette flowers, however, were added both as a decoration and as an ingredient in the filling.

How to prepare the recipe for savory pie with courgette flowers

  1. First clean the courgette flowers by removing the stem and pistils. Then rinse them quickly under running water and dry them with kitchen paper.
  2. In a bowl, mix all the filling ingredients : ricotta, cream, eggs, parmesan and diced mozzarella.
  3. Wash and trim the courgettes and grate them with a grater with large holes, then add them to the mixture, mixing well, adding salt and flavoring with the grated lemon zest (optional).
  4. Also add half the courgette flowers cut into strips.
  5. Unroll the puff pastry and transfer it with the supplied baking paper into a 24-26 cm diameter pan . Pour the filling, leveling it, then decorate the surface with the courgette flowers kept aside.
  6. Cook at 190°C for 35 minutes or until the pastry is golden and crispy. You can enjoy it immediately but we advise you to let it rest for a few minutes before serving it. In fact, lukewarm allows you to perceive the flavors better.

If you want, you can also make a version without courgettes , simply omitting them from the recipe. The filling will therefore consist solely of eggs, ricotta, cream and cheese grated and flavored with lemon zest and enriched with courgette flowers.
