How to prepare scarcelle in an air fryer: Easter cake with hard-boiled eggs.

Scarelle are a typical dessert of Easter in Puglia which owe their name to the traditional wheel shape. Today it is actually possible to find them in different guises, usually all relating to the Easter theme, such as chicks and bunnies. These delicious biscuits can also be cooked in an alternative way and we have experimented with the little biscuits in the air fryer.

We chose the classic shape because we love to stay close to tradition and the same goes for the decoration: an egg and sugar sprinkles. So let's see how to proceed in making this Easter dessert.

How to prepare the scarcelle recipe in the air fryer

  1. The preparation of the scarcelle is really simple. Combine the flour, sugar, yeast, 1 pinch of salt, oil, eggs and milk in a bowl (or if you are handy on a pastry board) and mix until you obtain a smooth dough.
  2. Wrap it in cling film and let it rest for an hour .
  3. Then divide it into 8 parts and keep one aside. Give the others the shape of a loaf and close it into a donut.
  4. Place a hard-boiled egg then cut smaller loaves from the dough kept aside and use two per egg to create the egg cage.
  5. Decorate with sprinkles and cook at 160°C for 20-25 minutes . Let them cool completely before serving.
