  3. Start cooking over a moderate heat and immerse the pieces of meat inside. Boil for 90 minutes .
  4. Drain them from the cooking water and set them aside for the moment.
  5. Repeat this operation, filling another pot with clean water. Salt it and start cooking again over a moderate heat for 30 minutes . This is to eliminate the fatty part.
  6. In the meantime, wash and clean the vegetables. Peel and chop the garlic and onion, clean the celery.
  7. Open the pepper to empty the inside and cut it into strips .
  8. At the end of cooking, take a pan and fill the bottom with oil.
