Soft apricot and yoghurt cake: a quick and easy dessert perfect for your family breakfasts and ideal for using seasonal fruit!

The apricot and yogurt cake is a soft and simple dessert to prepare. The softness is certainly given by the addition of white yogurt in the base dough which is then enriched by fresh apricots, one of the typical summer fruits together with watermelon, peaches, plums and melon.

The preparation of this dessert is truly within everyone's reach : let's see immediately all the steps of the recipe!

Preparation of the cake with yogurt and fresh apricots

  1. Shell the eggs inside the bowl of the planetary mixer, add the sugar and whip with the whisk until you get a frothy mixture. Continuing to whisk, add the yoghurt and seed oil.
  2. Continue adding the well sifted flour and baking powder a little at a time.
  3. Pour the mixture thus obtained into a cake tin lined with baking paper, level the mixture well and distribute the washed apricots, cut in half and de-stoned, on the surface.
  4. Bake in a preheated oven at 180°C for 40 minutes . Before removing from the oven, check the cooking by doing the toothpick test: if it comes out clean, you can remove the cake from the oven.
  5. Leave to cool completely before decorating with icing sugar.

The apricot cake prepared following this recipe can be kept under a glass bell for 3-4 days .

If you prefer , you can replace the plain yogurt with apricot yogurt or add other fruit such as peaches or plums.
