- The first step is to finely cut the speck into strips.
- In a pan heat the butter and brown the speck until it is golden brown without becoming crunchy.

- At this point, add the rocket to the speck and turn off the heat by adding 2 ladles of pasta cooking water.

Fanciful variations of rocket and speck pasta: with cream or with cherry tomatoes

- For the variant with cream, you will have to add it instead of the cooking water . For two people, 50 ml of cooking cream is sufficient.
- As for the variant, speck and cherry tomatoes, they must be inserted after the speck is golden enough . About 125 g is enough for two people, cut in half.
