Spring cake is the recipe that will amaze everyone with its beauty and delicate flavour. Here's how to prepare this stuffed dessert.

The arrival of Spring really deserves to be honored with a party. Finally, after months of cold and dark, the days have lengthened and the plants are beginning to repopulate with leaves. To celebrate all this, we really need the Spring Cake!

Layers of soft sponge cake , filled with cream and mascarpone and decorated with strawberries , the fruit that best represents the season, are the components of this very simple yet refined dessert. In fact, the preparation does not take much time, but the result is a stuffed cake that could also be very well used as a birthday cake.

How to prepare the spring cake recipe

  1. To prepare the spring cake, start with the sponge cake. Break the eggs at room temperature into a bowl and add the sugar .
  2. Work with electric whisks, or in a planetary mixer equipped with a wire whisk, at maximum power. The mixture should triple in volume .
  3. Flavor it with vanillin then add the sifted flour , little by little and mixing with a spatula. The movements must be delicate and from bottom to top.
  4. Pour the mixture into a baking tray lined with parchment paper with a diameter of 24-26 cm and cook in the oven at 180°C for 35 minutes.
  5. Remove from the oven and let it cool completely before cutting it.
  6. In the meantime, dedicate yourself to the cream. First, mix mascarpone and icing sugar until you get a cream.
  7. On the side, with an electric mixer, whip the cream until stiff.
  8. Then, incorporate it into the mascarpone, stirring gently from bottom to top.
  9. Transfer the cream obtained in a pastry bag .
  10. Wash half of the strawberries , remove the stalk and cut them into cubes of half a centimeter on each side. Then, season them with lemon juice and keep aside.
  11. At this point, cut the sponge cake in half to obtain two discs.
  12. Arrange the first one on a plate and wet it with milk (you can also use other types of sauces as you like).
  13. Cover with a layer of about one centimeter of cream and then arrange the strawberries .
  14. Put the other disc of sponge cake , cover it with the leftover cream and finally decorate with the remaining strawberries , after having washed them, and some edible flowers.

We advise you to leave the cake in the refrigerator for at least one night before consuming it. If you wish, you can fill it with cream and strawberries and complete the decoration on the surface with strawberries and flowers just before serving .

The spring cake, given the presence of the cream filling, should be kept well covered in the refrigerator . In this way it can be preserved for a maximum of 3 days . We advise you to serve it after bringing it back to room temperature.
