Air fryer stuffed artichokes are really simple to make. Excellent as a second course, they are so substantial that they are enough on their own for a complete dinner. When cooked in an air fryer they cook perfectly: the inside remains soft and delicious, while the outside has a characteristic aftertaste of roasted artichoke, which we all like so much. The first thing to do is clean and empty the artichokes. Later, you can prepare their succulent filling, made with a mixture of eggs, sausage and breadcrumbs . If your mouth is already watering, head straight to the kitchen!

Preparing the recipe for stuffed artichokes in the air fryer

  1. To begin, soak the breadcrumbs in water.
  2. Then, clean the artichokes. Then, cut the stem and the outermost part of the leaves; also remove the outermost leaves – because they are also quite hard – and eliminate the base of the artichoke.
  3. Cut off the tops of the leaves and remove a few leaves from the center.
  4. Fill a pan with water and place it on the stove; when it comes to the boil, add salt and dip the artichokes.
  5. Let them blanch for about 15 minutes .
  6. In the meantime, dedicate yourself to the filling. Remove the casing from the sausage and crumble the inside. Then, pour it into a bowl.
  7. Add the egg and the crumbs, after having squeezed them. Also pour in the grated parmesan and mix.
  8. Season the filling with a little salt, pepper and parsley; mix to distribute the flavors well.
  9. When the artichokes are ready, drain them and let all the excess water drip off.
  10. Fill each one with a little filling and, little by little, place them in the air fryer basket.
  11. Cover the surface with grated parmesan and a drizzle of olive oil.
  12. Cook at 180°C for 15 minutes ; then, switch to 200°C for another 5-10 minutes . Once finished, let them cool before serving.
