Sugar-free fig jam

Sugar-free fig jam is one of the best recipes for preserving this sweet fruit. Here's how to prepare it!

When fig season arrives it is impossible to resist the temptation to buy them: soft, sweet and juicy, with a beautiful bright color, they are perfect for creating many recipes such as sugar-free fig jam. We have already seen how simple it is to prepare sugar-free jams (just add some apple slices) and today we will find out specifically how to obtain it with figs. This summer fruit, in fact, given its natural sweetness , is perfect for this purpose!

Once prepared, fig jam is perfect not only for creating delicious tarts, but also served in combination with mature cheeses such as pecorino. Here's the recipe!

How to prepare fig jam without sugar

  1. Wash the figs, cut them into quarters to check that there are no worms and remove the two ends.
  2. Place them in a thick-bottomed pan together with the juice and zest of a lemon.
  3. If you don't want the jam to be in chunks, blend everything now with an immersion blender (otherwise we recommend adding a glass of water to help the fruit fall apart without sticking excessively to the bottom).
  4. Once the figs have been blended, add cinnamon or powdered spices to taste.
  5. Cook for about an hour starting from the boil. Check the cooking by simply dropping a few drops of jam onto a saucer : by tilting it, it should drip very slowly.
  6. At this point, if you have left the jam in pieces, you can still decide whether to blend it.
  7. Distribute it into the still boiling sterilized jars , close with a new cap and immediately place it upside down to facilitate the formation of the vacuum.
  8. When all the caps have emitted the characteristic " clack ", you can turn the jars.

Once cold, fig jam can be stored in the pantry for up to six months . When you open a jar, however, keep it in the fridge and consume within a week.

You can store the jam jars (provided they are vacuum-packed) for around 4-5 months in a cool, dry place away from light sources. Once opened, the jam should be stored in the refrigerator and consumed within a week. We do not recommend freezing in the freezer
