Tarte tatin with apricots


Have you ever tried apricot tarte tatin? It is excellent for enhancing summer fruit with an easy and sugary dessert.

If you are passionate about typical French cuisine, then you have surely heard of the tarte tatin. This dessert, traditionally prepared with apples , is original because it is turned upside down before being served. However, to celebrate a fresh and summery fruit like apricots , why not prepare an apricot tarte tatin? Here's the recipe!

Preparation

  1. Start with the shortcrust pastry. Put the 00 flour in a bowl and add half the butter cut into pieces and knead until you have a sandy consistency. Then add the water all at once and a pinch of salt.
  2. Once the dough has become smooth , form a ball and flatten it to create a disc . Cover with a layer of film and leave in the fridge for about an hour .
  3. Wash the apricots , cut them in half and remove the stone.
  4. In a saucepan, mix the other half of the butter and the sugar to form the caramel . Spread it on the bottom of a cake tin with the help of a spoon.
  5. Place the apricots on top of the caramel with the cut side facing up . Add some almond pieces and some thyme .
  6. Retrieve the shortcrust pastry from the fridge and roll it out on the apricot and caramel mix with a rolling pin . Bake at 200° C , with the oven in "static" mode, for about 30 minutes .

Conservation of apricot tarte tatin

The tarte tatin is a dessert which, to be enjoyed at its best, must be eaten fresh from the oven . Alternatively, if you want to preserve it, you can keep it in the fridge for a maximum of 1-2 days . Furthermore, it is absolutely not recommended to freeze it .
