How to prepare the onion tarte tatin recipe

  1. First, peel the onions and cut them into slices half a centimeter thick so that with each cut you can see all the internal layers. This will make the finished recipe even more beautiful to look at.
  2. Butter the bottom of a 24cm diameter baking pan and arrange the sliced ​​onions so as to cover it completely.
  3. Sprinkle them with brown sugar .
  4. Unroll the shortcrust pastry , place it on the onions, pressing lightly, then fold the excess edges slightly. If you don't like them, you can also remove them by cutting the brisé to size.
  5. Cook at 200°C for 15 minutes then open the oven to lower the temperature and continue cooking at 180°C for another 15 minutes .
  6. Turn the savory tarte tatin upside down immediately after it comes out of the oven and serve hot.

To prepare the onion tarte tatin with balsamic vinegar glaze you must proceed as follows:

  1. In a pan, place 4 tablespoons of brown sugar , 100 ml of balsamic vinegar and the onions cut into concentric slices.
  2. Let it cook until a glaze forms. Allow a couple of minutes on each side.
  3. Spread the onions and all the icing on the bottom of a 24cm diameter baking pan .
  4. Cover with the shortcrust pastry and proceed with cooking: first at 200°C for 15 minutes and then at 180°C for another 15 minutes.
  5. Turn it over while it is still hot and serve.
