Preparation of the chickpea and rocket pasta recipe

  1. Heat a drizzle of extra virgin olive oil in a high pan , fry a clove of minced garlic until it turns brown.
  2. Add the precooked chickpeas, a pinch of salt and a glass of water, and cook for about 20 minutes .
  3. After the time has passed, transfer half of the chickpeas to a tall container. Coarsely chop 10 fresh rocket leaves and blend everything with a mixer.
  4. Throw the pasta into the water and cook for 7 minutes. When it is ready, drain it and add it to the chickpea cream.
  5. Mix the cream pasta well and decorate with the unmixed chickpeas and 5 finely chopped rocket leaves. Serve the hot dish on the table and … Enjoy your meal!

Variations of pasta with chickpea cream and rocket

Maybe overdoing it is not for you and changes are not your forte. If you prefer to enjoy legumes in their entirety, you can safely not blend them. Moreover, the cold pasta with chickpeas and rocket can become perfect for hot summer lunches .

There are those who prefer to prepare raw chickpeas with their own hands. In this case it will be necessary to soak the chickpeas, the evening before preparation, in a bowl with warm water and a spoonful of baking soda. At the moment of cooking, fry the garlic in a pan with a drizzle of oil and remove it when it is golden. Pour in the chickpeas and cook for 40-45 minutes together with half a chopped small onion and a sliced ​​celery stalk, a bay leaf and a pinch of salt. Add a ladle of water if you see them too dry.

To give an even tastier touch, you can add cherry tomatoes to the cream or crispy bacon .

storage

Ready pasta is best consumed immediately . You can prepare the chickpea cream beforehand and leave it in the fridge for up to one day . We do not recommend freezing.
