Pasta with asparagus pesto is a light and simple first course to prepare, ideal for a quick lunch or dinner.
Pasta with asparagus pesto is a perfect first course for spring , when asparagus is found fresh in beautiful bunches. In this case the asparagus is used to season the pasta, but is first reduced to a sauce with the addition of grated Parmesan and pine nuts, a delicious sauce reminiscent of the classic basil pesto.
To make the seasoning even tastier you can also add fresh aromatic herbs such as basil, marjoram or thyme. Let's go prepare this delicious first course together!
Preparation of pasta with asparagus pesto
- Start by preparing the asparagus: cut the hardest base then wash them carefully and tie them with kitchen string.
- Place a pan on the heat, bring to the boil , add salt and the asparagus.
- Cook for 5 minutes, then remove the vegetables and throw the pasta into the same cooking water.
- Cut the asparagus into pieces, leaving the tips intact, which you will keep aside for the final decoration.
- Now we are ready to finish our asparagus pesto recipe: transfer everything into a blender then add the grated Parmesan, pine nuts, oil, salt, pepper and nutmeg. Blend until you obtain a creamy sauce. If necessary, you can thin it with some cooking water, if it is too thick .
- Drain the pasta and season directly with the asparagus pesto and the tips previously kept aside.
- Serve and finish with a drizzle of raw extra virgin olive oil and a sprinkling of black pepper. Enjoy your meal!

We recommend consuming this delicious pasta at the moment . Alternatively you can prepare the asparagus pesto and freeze it in the freezer or keep it in the fridge for 3-4 days , covered with a thin layer of oil.
