How to prepare the tiramisu recipe with the Thermomix

  1. First prepare the coffee which must be at most lukewarm when you start assembling the dessert.
  2. Then break the eggs, allowing only the egg white to fall into the bowl. For it to rise it is very important that there are no traces of yolk.
  3. Then assemble everything for 2 minutes. Speed 4 by setting the temperature to 37°C.
  4. Transfer the egg whites into a bowl and place the egg yolks with the sugar in the bowl. Work them for 2 minutes. speed 3 then add the mascarpone and work for another 2 minutes. speed 3 .
  5. Add the cream to the egg whites, mixing with a spatula, very delicately from bottom to top.
  6. Now all that remains is to assemble the dessert . Spread a thin layer of cream on the bottom of a ceramic or Pyrex baking dish. Soak the ladyfingers in the coffee for a total of 3 seconds and form a first layer. Cover with half the cream, form another layer of biscuits and cover with the remaining cream. Sprinkle with bitter cocoa and leave to rest in the refrigerator for a couple of hours before serving.
