How to prepare tofu meatballs recipe

  1. First, press the tofu to remove as much water as possible, then mix it with your hands and put it in a blender together with the nutritional yeast, a pinch of salt and the garlic powder. Blend until you obtain a cream.
  2. Transfer the mixture obtained into a bowl and add the chopped parsley with the knife together with the chickpea flour and mix well. Then add as much breadcrumbs as needed to slightly dry the mixture. However, it should remain at least partially moist.
  3. After letting it rest for half an hour in the refrigerator, covered with cling film, form meatballs about the size of a walnut.
  4. Heat a drizzle of oil in a pan and brown them well on all sides for about 5-10 minutes . Serve hot with a side dish of your choice.

You can cook the tofu meatballs in the oven at 180°C fan assisted for 15 minutes.

The procedure is the same but after browning them in the pan they will be dipped in the sauce. You will need:

  • 1/2 onion
  • 2 tablespoons of extra virgin olive oil
  • 300 ml of tomato puree
  • Salt and Pepper To Taste

Chop the onion and brown it in a pan with oil. Add the tomato puree, season with salt and pepper and leave to cook for 15 minutes . Once thickened, add the meatballs and cook for another 2-3 minutes.

How to make tofu meatballs even better

Tofu is an ingredient that by its nature absorbs the flavors of other ingredients. For this reason, to make the tofu meatballs tastier we can add to the dough:

  • 3 dried tomatoes blended together;
  • 1 tablespoon of green or Taggiasca olives ;
  • 2 tablespoons soy sauce ;
  • 1 tablespoon of tomato paste and 1 teaspoon of oregano for a more Mediterranean flavor.
