How to prepare the asparagus omelette recipe

1. First wash the asparagus and remove the final part of the stem, which is too hard to be eaten. Then keep the tips whole and cut the rest into slices of half a centimeter thick.

Cook asparagus in a pan

2. Chop the onion and brown it in a pan with a drizzle of oil and the garlic without its core. Then add the asparagus in the pan and cook for 10-15 minutes adding a ladle of water, finally adjusting with salt and pepper. When cooked, they should be tender but not mushy.

Beat eggs with cheese and dressing

3. On the side , beat the eggs with the grated cheese, a pinch of salt and one of pepper.

4. Add the asparagus, remembering to remove the garlic clove and mix quickly.

5. Oil the pan with the remaining oil and heat it well before pouring in the egg mixture. Cook for 2 minutes over high heat , then cover with a lid and cook for 5-10 minutes over medium-low heat.
6. When the edges are well detached from the pot, using the lid, turn the omelette and continue cooking on the other side for about 5 minutes.

7. Serve the omelette hot, at room temperature or cold: it will still be excellent.

storage

The omelette can be kept in the refrigerator, covered with plastic wrap or in an airtight container, for a couple of days . You can consume it at room temperature or by heating it slightly in a pan or in the microwave.
