We know: fried desserts are good until we have to prepare them. This is why we thought we would simplify your life by studying a recipe suitable for preparing San Giuseppe zeppole in an air fryer. As good as the originals with their custard and black cherry filling, they are perfect to prepare for Father's Day.

The basic dough is that of cream puffs, i.e. choux pastry, which however instead of being fried is cooked in an air fryer. In this way we will obtain a lighter but equally delicious dessert. Curious to find out how to take advantage of our most trusted household appliance on this occasion too?

How to prepare the San Giuseppe zeppole recipe in the air fryer

  1. First prepare the choux pastry in the usual way. Pour the water into a pan, add the butter and salt and let it melt.
  2. Once it is about to boil, pour in 70 g of flour, stirring with a wooden spoon. Leave to cook for 3 minutes or until a ball of dough forms and a thin white film on the bottom.
  3. Let the mixture cool for a few minutes then add the whole eggs one at a time, mixing well.
  4. Transfer the dough into a pastry bag fitted with a star nozzle and form the zeppole directly on a sheet of baking paper placed inside the air fryer basket. We advise you not to make them too large so as to make cooking faster and more uniform.
  5. Then cook them at 180°C for 8-10 minutes , then we raise the temperature to 200°C for 10 minutes of second cooking.
  6. While the zeppole are cooking, prepare the custard. In a saucepan, heat the milk with the vanilla bean cut in half lengthwise.
  7. In a bowl, beat the egg yolks with the sugar and the remaining flour until a smooth mixture is obtained. Pour the milk over it before it reaches the boil and transfer it back to the heat. Let the custard thicken for the next 5-8 minutes.
  8. Once ready, transfer it into a pastry bag with a star nozzle and let it cool.
  9. You can fill your zeppole only on the surface or, for an even richer and tastier variant, divide them in half and put a little cream inside.
  10. Complete with a black cherry in syrup and a sprinkling of icing sugar and serve.

If you don't have an air fryer you can also prepare baked zeppole , a healthy alternative that is easier to prepare than the classic recipe .

storage

The zeppole will keep out of the fridge for a maximum of one day . Furthermore, it is better to store it in a cool place and consume them within a couple of days.
