How to prepare the recipe for zucchini balls with the Thermomix

  1. First, put oil and garlic in the jug and brown everything for 3 min. 100°C speed 1.
  2. Remove the garlic clove and add the diced courgettes (washed and deprived of the ends) and blend for 15 seconds. speed 6.

Much lighter due to the presence of ricotta and excellent both in the oven and in the pan, these zucchini and ricotta meatballs are really simple to prepare. You will need:

  • 2 zucchini
  • 250 g of cottage cheese
  • 1 egg
  • 80 g of grated Parmesan
  • 1 bunch of parsley
  • Salt to taste
  • pepper as needed
  • breadcrumbs to taste
  • Seed oil for frying

Combine the washed zucchini in the mixing bowl, remove the ends and cut into chunks and the parsley and blend everything for 10 seconds. speed 6. You will have to obtain rather small pieces. Then add the ricotta , the egg , the Parmesan , a pinch of salt and one of pepper and mix for 10 seconds. speed 4. Now add as much breadcrumbs as needed to dry the mixture.

The best way to go is to add it a spoonful at a time from the cap and see when the dough has dried.

Then form meatballs about the size of a walnut and fry them in seed oil . Instead, they will cook in the oven at 200°C for 20 minutes.

Perfect as a main course, these meatballs are really delicious . The ingredients for 4 people are:

  • 1 courgette
  • 400 g of mince
  • 40 g of Grana Padano
  • 100ml of milk
  • 30 gr of breadcrumbs + to taste for breading
  • 2 eggs

First, chop the courgettes , washed and cut into chunks for 5 seconds. speed 4 . Add the minced meat , milk , grated cheese , eggs and breadcrumbs and mix everything together for 20 sec. speed 5. Form the meatballs, roll them in the breadcrumbs and fry them in a drizzle of oil for 10-15 minutes, turning them from time to time.

If you are looking for quick and easy recipes, there is nothing better than this version with raw zucchini . The necessary ingredients are:

  • 650 g of zucchini
  • 2 eggs
  • 70 g of breadcrumbs + to taste for the breading
  • 40 g of grated Parmesan
  • 1 tablespoon of extra virgin olive oil,
  • 1 clove of garlic
  • mint to taste
  • Salt to taste
  • Pepper as needed

Put the garlic in the bowl and chop it for 3 seconds. speed 5 . Then add the courgettes cut into chunks and blend them for 10 seconds. speed 4 . Add the other ingredients and mix for 20 seconds. speed 4 . Now all that remains is to form the meatballs, roll them in the breadcrumbs and fry them in a drizzle of seed oil for about ten minutes. Instead, they will cook in the oven at 200°C for 20 minutes.
