We're talking about air fryer zucchini flan. Much like a zucchini flan or patty , it's made from simple ingredients like potatoes and zucchini and then cooked in the air fryer.

The result is a soft and tasty zucchini pie that lends itself well to being customized according to your tastes. We like it simple but if you want you can add a stringy heart , diced cheese or cubes of ham, bacon or speck . In short, green light to your imagination!

How to prepare the recipe of the zucchini flan in the air fryer

  1. First wash the zucchini and remove the ends. Then reduce them to not too large pieces and keep them aside.
  2. Peel the potatoes and also cut them into chunks of about 1 cm per side. Season them with a spoonful of oil and a pinch of salt and cook in an air fryer at 190°C for 10 minutes.
  3. Add the courgettes seasoned in the same way and continue cooking for another 10 minutes.
  4. Transfer the cooked vegetables into a bowl and mash them with a fork then add the eggs, grated cheese, breadcrumbs, salt and pepper as needed and a few leaves of oregano or basil broken up by hand.
  5. Divide the mixture into 4 oiled aluminum cups covered with breadcrumbs, then cook the zucchini flan in an air fryer at 200°C for 15 minutes . Unmold them and serve them piping hot.

Once fresh, the zucchini pie in the air fryer can be kept in the refrigerator, well covered with plastic wrap, for 2-3 days . We advise you to bring it back to room temperature before serving or to heat it slightly in the oven, fryer or microwave.
