Zucchini in oil: the perfect recipe to preserve them

Zucchini in oil are very easy to make and delicious to enjoy all year round. Here is the easy recipe to prepare them.

This preserve is very easy and quick to prepare, and can be made in the summer and then left in the pantry throughout the winter. Ideal to be enjoyed with bread, on bruschetta or to enrich tasty salads, this zucchini preserve will amaze you with its aromas and taste.

As far as making it, however, the recipe is really easy: just cut the courgettes, let them drain (a bit like aubergines) and put them in jars with oil and herbs. Have we convinced you? Let's get started right away!

How to make raw zucchini in oil

With our recipe you can make about two 300 g jars . If you want more, all you have to do is increase the doses!

  1. Wash the courgettes and then cut them, choosing the shape you like best (we recommend slices or match sticks).
  2. Once done, put them to drain in a bowl sprinkled with coarse salt and cover with a weight. This operation will take at least an hour , but the courgettes will release all the excess water.
  3. At this point, remove the excess salt and leave the courgettes to soak in water and vinegar for a few minutes.
  4. Sterilize the jars and insert the courgettes, then add the oil, garlic, pepper, salt, mint and parsley. Also add the chilli pepper , if you like, and seal well.
  5. Store the courgettes in a cool, dry place. If you want to enjoy them at their best, wait at least twenty days . Enjoy your meal!

How to vacuum pack

For preserves in oil and vinegar, it is not necessary to vacuum-pack them as long as the jars are perfectly sterilized. Furthermore, passing the vegetables still in water and vinegar further decreases the possible risk of mold . However, if you want to proceed, here's how:

  1. Put a pot full of water on the fire. Add the jars, wrapping them in a cloth to prevent them from breaking.
  2. Light the fire and boil for 25 minutes .
  3. When everything has cooled, remove, dry and store in the pantry.

Preparing it raw allows you to keep your zucchini preserve nice and crunchy , but if it's not your thing, we show you some tricks to make it cooked.

  • A first method requires that, after being cut and drained, the courgettes are blanched for 5 minutes in water and vinegar. Then, drain and squeeze well and proceed with potting.
  • Do you have excess grilled zucchini ? Also in this case you can preserve them in oil. We advise you to grill them on a hot griddle (a few minutes per side is sufficient) and, once cold, place them in jars and cover with oil and herbs.
  • The same goes forbaked courgettes : once cut into cubes and cooked at around 170°C for 25 minutes , add a little vinegar and place in sterilized jars before covering with oil and herbs to taste.

storage

Courgettes in oil can be kept for up to 6 months : always keep them in a dark, dry place. Once you open the jar, always put it in the fridge and check that the vegetables are always covered in oil: if it is missing, add it from time to time .
