Stuffed zucchini in air fryer
Crispy and delicious, stuffed zucchini cooked in an air fryer are an easy-to-make and very substantial second course.
We've loved and enjoyed them in so many ways, but now it's time to try air fryer stuffed zucchini. It is a very simple and quick preparation to do. The result is delicious and crunchy, to serve a second course that will delight everyone with its simplicity. We begin by working on the main ingredient, i.e. the courgettes , which must be cut and the internal pulp removed. Don't worry, because this doesn't go to waste: you have to mix it with other ingredients to make the filling; with scamorza cheese , tomatoes and little else you will fill them in a really tasty way!
Preparing the recipe for stuffed zucchini in an air fryer
- Get the longest and widest zucchini you can find, then wash and dry them.
- First remove the two ends, then cut them in two halves , continuing horizontally.
- With the help of a spoon, dig the inside to remove all the pulp ; put it in a bowl.
- Mash the pulp to make it creamier, then add the egg and grated cheese; cut the cherry tomatoes into 4 parts and add them.
- Season with a pinch of salt and pepper, then add the breadcrumbs.
- Cut the scamorza into cubes and add it to the rest of the ingredients.
- At this point, stir to distribute and mix them together.
- Spread the filling over the courgettes, being careful not to break them up.
- Then, place them in the fryer basket and drizzle them with a little olive oil.
- Bake at 180°C for 20 minutes . Once ready, serve them!
storage
Stuffed and stringy courgettes, cooked in an air fryer, are tasty and simple, suitable for serving a genuine second course. You can keep them for 2 days in the fridge , closed in an airtight container.
Equally tasty and simple are the peppers stuffed with rice and cooked in an air fryer !
