Stuffed tomatoes in the air fryer

The main ingredient is, in fact, large red tomatoes , which must be large enough to accommodate a tasty filling. The inside is filled with a mix of tomato pulp, breadcrumbs, oil and little else; finished with a little scamorza cheese and breadcrumbs and the outside will be stringy and crunchy . The result is an absolutely light vegetarian dish . It is a product with a genuine flavor and which contains very few calories. Cooked in the air fryer, it also produces very little fat.
Preparing the recipe for stuffed tomatoes in the air fryer
- First, take some ripe and large enough tomatoes. Wash them under running water and dry them with paper towels.
- Cut off the top part ; you can decide whether to keep it, to cover the tomatoes, or discard it.
- Using a spoon, remove all the internal pulp , to put it in a bowl, or in the bowl of the mixer.
- Be careful not to break the external structure as well, which you must temporarily set aside.
- To the pulp of the tomatoes add the breadcrumbs, the breadcrumbs, the chopped fresh basil and a generous drizzle of olive oil; season with a pinch of salt and pepper and a clove of minced garlic.
- Blend the mixture to obtain a smooth puree .
- Distribute the filling among the tomatoes, trying not to fill them too much.
