Corn tortillas, in addition to being the symbol of Mexican cuisine, can also be used as a substitute for bread for your aperitifs , appetizers or single dishes. The name of the different preparations depends on the way the tortillas are served. Before seeing the tortilla recipe, however, it is important to know that the flour used in these preparations is masa harina , white corn flour: it should not be confused with corn flour or cornstarch. Preparation of corn tortillas

  1. To make cornmeal tortillas, start by placing the flour in a bowl with salt.
  2. Gradually add the hot water a little at a time in order to obtain a homogeneous dough and let it rest for about twenty minutes .
  3. Take the dough and divide it into balls of the same size.
  4. Roll out the balls with the help of a rolling pin on a floured surface or between two sheets of baking paper.
  5. With the help of a plate cut out the disc of dough and continue in this way to make the other tortillas.
  6. Place a non-stick pan on the stove and cook the tortillas for two minutes on each side .

The tortilla recipe is very easy, as you have been able to ascertain, however we recommend consuming the finished product as soon as possible since these discs of dough tend to dry out easily. Once ready you can also freeze them, before cooking them, in the freezer, making sure that they are well separated by a sheet of parchment paper so that they do not stick.
